My doctor says that a condition of being a Celiac could very well be obesity! So it's just not a skinny people condition!
I think that the reason that you may not be losing any weight could very well be the gluten-free items you may consuming.
I for example took this as a challenge. Instead of going for the alternative gluten-free cookies and gluten-free pasta and such and such, I've decided to keep them off my diet completely. Why even consume them? I used this diagnosis as a challenge and instead in the mornings I am making myself a fresh fruit and vegatable smoothie. I alternate the size of the smoothie every other day and then eat a slice of ham w/ a vegan egg. Every morning though I am drinking that smoothie along with my liquid iron (gluten-free) suplement. I also put Organic Spirulina on the smoothie since it's a great vitamin replacement supplement (also gluten-free!) lol
At lunch I will eat a salad with a piece of grilled chicken or tuna with light mayo and alternate w/ gluten-free breads, etc.
At night (before 6 pm) I am eating a fist sized portion of protein. Whether it is Steak, Chicken, Fish, etc. and I mix up my carbs for the week. One day I'll have corn, the next day I'll have potatoes (boiled, steamed, baked), etc.
In between all my meals I am eating a fruit.
I've been doing this for almost 2 weeks now and I have lost 10 lbs. I must say that I am finding myself with more energy (could very well be the combo of Spirulina and Iron) but also less hungry each time - to the point where I am making myself eat at dinner time.
I just bought gluten-free cereal for the first time today. I may add that to the weekend portion of my diet as a "fun" factor, if it tastes good.
Oh and let's not forget natural vanilla ice cream! One scoop will not break you... but will satisfy you! Make sure you have it before 6 pm though so that you have enough time to burn it!!
